The Wine Advocate: The 2008 Brut Reserva offers up aromas of biscuit, mineral, and apple leading to a nicely proportioned, quite dry (4.5g dosage), lengthy wine that is meant for drinking over the next 12-18 months. Agusti Torello Mata has a reputation as one of Spain’s foremost Cava producers and my visit in January 2011 did nothing to disprove it. The stated goal is “to make Cava with soul” working with only the traditional grapes. All of the fruit utilized is at least 30 years of age. Deze Cava bestaat uit 2 druivenvariëteiten, enerzijds de traditionele Cava-druif Parellada, anderzijds de meer innovatieve Chardonnay. Deze blend levert een frisse en zachte Cava op en onderscheidt zich daarmee van de traditionele Cava’s, hoewel bij de productie dezelfde methode werd gebruikt. Rijping vond plaats in de kelders van Albet i Noya bij een constante temperatuur van 16ºC. De wijn werd met de hand geklaard en gelabelled. Serveren op 6°C.

Omschrijving:	25% Macabeu, 25% Parellada, 25% Xarel.lo, 25% Chardonnay. Biologisch. Dit domein is de bio-pionier van Spanje. Josep-Maria Albet i Noya introduceerde in 1979 dit nieuwe concept in de Spaanse wijngaarden. Samen met zijn broer Toni controleren ze op dit moment meer dan 100 ha ecologische wijngaarden. De twee broers zitten niet stil, want intussen hebben ze projecten in Rioja, Priorat en zijn ze een zoektocht gestart naar vergeten oude druivenrassen. In 25 jaar tijd zijn ze erin geslaagd om jaarlijks betere wijnen te maken en de consument te blijven verrassen. Ze zijn gevestigd in San Pau d’Ordal (Alt Penedès), een goeie 35 km ten zuiden van Barcelona, en niet zo ver van Sant Sadurni d’Anoia, de hoofdstad van de cava. Demi-sec cava is bijna onvindbaar geworden in Catalunya. Niettemin kan men historisch nagaan dat vroeger deze soort bijna de meest geproduceerde was in Catalunya. Op dit moment wil de consument echter zijn méthode traditionnelle sec en wordt dit soort cava’s uit de markt gedrongen. En toch biedt dit soort cava zeer veel mogelijkheden en combinaties in de gastronomie. Un bon demi-sec avec beaucoup de caractère. Mooi van kleur met fijne pareling. In de neus lijkt hij wel droog, met toch veel finesse en wit fruit. In de mond zet hij vrij strak aan, maar wordt dan romiger met een klein zoetje. Zeer mooi uitgebalanceerde demi-sec met veel karakter. Deze demi-sec is rijk en vol en niet zozeer restzoet, wel fruitig. Wim Van Leuven Serveren op 8° C.

Brioche, baking spices, floral notes, and green apple inform the nose of this just off-dry, smooth-textured, nicely balanced sparkling wine. Drink this very good value over the next 12-18 months. There are two 800 pound gorillas in Cava, Codorniu and Freixenet. The Wine Advocate: The flagship of the Bodega is called Kripta. The Kripta is beautifully refined and elegant, a veritable Catherine Deneuve of sparkling wine. It is still tightly knit and will benefit from a few more years of bottle age. I was also shown Kripta from 2003, 2000, 1993, and 1985 disgorged one week before my visit. The 1993 Krypta is the finest Cava I have ever tasted, caught right at its peak, a sparkling wine complete in every way. Agusti Torello Mata has a reputation as one of Spain’s foremost Cava producers and my visit in January 2011 did nothing to disprove it. The stated goal is “to make Cava with soul” working with only the traditional grapes. All of the fruit utilized is at least 30 years of age. Approximately 20% of the production is exported to a total of 31 countries.

Base wine: Elaborated with selected grapes from vineyards of the Cava D.O. Controlled fermentation of the first must. Ageing: About twelve months in bottle, before disgorging. Total acidity: 4 g/l. (s.a.). Residual sugar: 10 g/l. Pale cherry red. Clean and bright. Its generous stream of fine bubbles forms a crown. It has a fruity aroma with a slight ageing tone. This wine has a complex and fruity taste, sweet and with a good balance in the mouth. The Wine Advocate: The N.V. Brut Rosado is an interesting blend of 60% Trepat, 20% Monastrell, and 20% Pinot Noir. Light to medium pink in color, it delivers a delightful perfume of rose petal, strawberry, and rhubarb. The Wine Advocate: The 2003 Brut de Brut Gran Reserva Brut Nature is made up of 64% Macabeu and 36% Xarel-lo aged on lees for 67 months. The Xarel-lo grapes were fermented in oak and the wine was finished with no dosage. It displays a bit more richness than the preceding wines, perhaps because of the oak treatment. Aromas of mineral, toast, almonds, and white fruits inform the nose of this superb effort. In the glass it is remarkably concentrated, vibrant, and refreshing. Recaredo’s Cavas have demonstrated an ability to evolve, so another 2-3 years of cellaring is likely to provide dividends. Recaredo Mata Casanovas is on my (very) short list of finest Cava producers in the DO. All of the fruit is sourced from estate vineyards in the Alt Penedes region, is Demeter-certified biodynamic in its farming practices (since 2009), aged in the cellars with natural cork stoppers, bottles are turned by hand in traditional racks, and are disgorged by hand without freezing. The vintage, months of aging, and date of disgorging are shown on all bottles. The Bodega’s stated reference points for their Cavas are Salon, Selosse, and Paul Bara. As an aside, I was shown three older vintages (1996, 1991, and 1984) disgorged in my presence during my visit.
